National Sandwich Month: Day 19 takes us to Louis Pizzeria in Cornwall for a Canadian classic: the Hot Chicken Sandwich.

It includes tender chicken inside soft bread, smothered in a rich gravy and fries on the side. This diner staple is especially beloved in Québec and Eastern Canada, where it’s known simply as “Hot Chicken”.

It’s my last sandwich here in Cornwall before I head home and today I’ve got company: Felix, along with his grandpa (If you know, you know, I may have been in his office a few times 🤣)

I didn’t make my own sandwich today but we stopped at The Shack to try the Gyros Pita 🥙. Juicy meat, fresh veggies, creamy tzatziki the perfect road-trip sandwich fix.

From 🇮🇸 Iceland to 🇻🇳 Vietnam in this bread series, we’re shifting gears to talk about bánh mì. This is my go-to bread for sandwiches and perfect for dipping into Vietnamese Chicken Curry (Cà Ri Gà) or Beef Stew (Bò Kho). 🍞🍛

The story of bánh mì begins with the French 🇫🇷 when they colonized Vietnam, they brought their baguettes. It’s a beautiful symbol of how we take what’s given to us, make it our own, and create something new and meaningful.

Much like my journey during this career break, I’m like a bánh mì – taking my toxic, traumatic experiences and shaping them into something meaningful. It won’t be easy, but it will be a process, and some days I’ll fail... a lot. But that’s the beauty of growth, right? 🌱

Ingredients:
3 1/2 cups Bread Flour
1 cup + 2 tbsp Water
1 Whole Egg (about 1/4 cup)
2 1/4 tsp Instant Yeast
1 tsp Salt
1 tsp Sugar

From 🇮🇸 Iceland to 🇻🇳 Vietnam in this bread series, we’re shifting gears to talk about bánh mì. This is my go-to bread for sandwiches and perfect for dipping into Vietnamese Chicken Curry (Cà Ri Gà) or Beef Stew (Bò Kho). 🍞🍛

The story of bánh mì begins with the French 🇫🇷 when they colonized Vietnam, they brought their baguettes. It’s a beautiful symbol of how we take what’s given to us, make it our own, and create something new and meaningful.

Much like my journey during this career break, I’m like a bánh mì – taking my toxic, traumatic experiences and shaping them into something meaningful. It won’t be easy, but it will be a process, and some days I’ll fail... a lot. But that’s the beauty of growth, right? 🌱

Ingredients:
3 1/2 cups Bread Flour
1 cup + 2 tbsp Water
1 Whole Egg (about 1/4 cup)
2 1/4 tsp Instant Yeast
1 tsp Salt
1 tsp Sugar
1/2 Vitamin C Tablet (crushed)

Quick Bruschetta x 2 for the Magic The Gathering 🃏Pod (veggie 🍅 and spicy sausage 🌭). I was super behind schedule as I still needed to finish building and sleeving my Moogle Warrior Commander - popped off too early then became the target for the rest of the game, then died to a board wipe!

Played 4 games, lost 3 and ironically won 1 game with my Toxic Commander, Atraxxa, lol IYKYK‼️

Learning now to bake this bread was therapeutic. Eating it, dripping in butter and topped with spinach dip or smoked salmon, or paired with a hearty stew was a cathartic experience.

After 3 years of working through lunch, gruelling commutes at 10 pm to get home after a long day - it was nice to just sit and eat a piece of bread in the silence.

If you can get it, make sure you get your hands on @saltverk salt with Icelandic Thyme! It’s my fave!

Hey Burnt Out Besties! Just dropping Episode 1 of my Bread Series. I plan on starting my healing by first eating a lot of carbs, and resting! I'm on my journey to recovery, and looking forward to all the friends and family who will be joining me along the way. The Husband is also super happy with all the taste testing he gets to do!

Ingredients
4 1/2 cups Organic Medium Rye Flour
2 teaspoons table salt
1 tablespoon baking powder
3/4 teaspoon baking soda
2 cups buttermilk, or while milk with 2 tablespoons of white vinegar
1/2 cup honey
1/2 cup molasses

Bake the bread for 2 hours, low and slow. for 2 hours and 15 minutes. With the last 15 minutes, turn off the oven and remove the lid from the pan and leave the loaf in the oven.

During the pandemic, I did a lot of scrolling on Instagram, and I don't know why but there were so many videos of people eating Martabak Manis from street carts. Pre 2020, I had never heard of this iconic street food.
-I first started researching recipes and techniques in April 2021. The results were good, but I was still missing the defined honeycomb texture. After a few trials and many errors, I figured out my mistakes, and today February 27, 2022, I made the most delicious Martabak Manis! Approvals from everyone in the house - even my mother-in-law who came by to drop off some items 😍

Martabak Manis: Thick Indonesian Pancake

Ingredients

225 grams of bread flour - sifted
